One pot soup meal

Yippeeeee, finally I am able to ditch pasta as a staple food while cooking in camp. That is a milestone for me and worth sharing for all who want a decent one pot meal in camp.

It took me a long time to come up with a decent meal cooked in camp. Having eaten pasta with sugared tomato paste for over a year I knew that should not have to be repeated ever again but how do you cook a tasty meal when you are not a cook and one that is also low on gas and water consumption?

Being in a country like Hungary it becomes near to impossible to cook a nice, tasty meal in camp. But being in Portugal a world of possibilities suddenly opened up and I was able to cook tasty, healthy meals that filled me up nicely.

I was helped via Instagram by Marita who is, among other trades, a cook and she advised me to use wakame as it has a lot of umami. Two words I’d never heard of. Two things impossible to get in Hungary, although umami is not nessecarily something you buy, it is one of the five basic tastes.

Wash your vegetables at a tap somewhere along the route (or toilet sink in supermarket, along with your panties)

Another person advised me to take a 1 liter pressure cooking pot with me, and perhaps I will do that one day but for now I came upon wakame (kelp, edible seaweed) and found the perfect one pot soup meal for when in camp.

Ingredients:

  • quinoa
  • lentils
  • potatoes (cut in pieces)
  • lot of green vegetables
  • carrots
  • avocado (to cut and place on top after the meal is cooked)
  • chunk of salmon or other fish (may be frozen or canned)
  • salt, fresh cracked pepper and herbs
  • wakame (I found it by surprise in the Aldi)
  • cashew nuts (additional)

Back at home crack whole pepper and salt to take along

  • Place wakame, quinoa and lentils in the pot with plenty of water and bring to a boil. Turn off the heat source/take off the fire (to save water and/or fuel).
  • Meanwhile cut the vegetables and/or avocado.
  • Check on the grains/pulses in the pot and place back on the fire source when needed. Add herbs, salt and pepper.
  • Add the frozen fish and vegetbles on top and boil softly a little longer with lid on the pot.

You can not take enough home grown herbs with you

It is such a good ingredient to make an otherwise bland soup very tasty and as you said, it weights hardly anything.
