One Pot Meal

When in countries where there isn’t fried fish nor fatty morsels of mutton for breakfast, then this might be the best option. It certainly keeps the bowels happy and is available throughout Europe.

Break-fast

It took me quite some figuring out how to beat the constipation of camping food after I started wholesome healthy home grown food diet.

Gear needed

A container to soak food overnight. If anyone has knowledge about soaking in titamium, I would like to hear. As plastic isn’t the best material to soak food in.

This recipe is only really possible when you have wheels to carry the whole outfit.

Ingredients

When you want a closer to wholesome, healthy, filling break fast than this is such a good mix.

  • Nuts (add Brazil nuts besides cashew nuts, walnut and/or pecan)
  • Rolled oats (and some other rolled grains)
  • Curcuma spice mixture (with black pepper included)
  • Chia seeds
  • Broken lineseed
  • Coconut flower sugar (without it’s good as well)
  • Psyllium husk
  • Pumpkin seeds
  • Sunflower seeds
  • Coconut flakes

Mix this all together in a container and pour milk over it until the mixture is fully covered (ideally oat or rice drink/coconut milk but I usually used milk powder). Let it soak overnight and add fruits when you have your meal.

In cool weather this keeps well for two nights.

I always carry dental floss with me to clean the teeth right after eating this, as chia seeds like to nestle in the smallest of gaps. A tiny branch will fuction as a toothpick.

Years of traveling brought me many different insights, philosophies and countries I needed to be (over 90 in total). I lived in Pakistan, went over 15 times to India and when I stopped cycling the world, that was after 50.000 kilometer through 45 countries, I met Geo. Together we now try to be more self-sustainable, grow our own food and live off-grid. I now juggle with the logistics of being an old-fashioned housewife, cook and creative artist loving the outdoors. The pouches I create are for sale on www.cindyneedleart.com
